Vinification: Alvarinho grapes used are carefully selected in vineyards with a lower sugar concentration and fresh acidity. The high quality must obtained the controlled temperature to achieve a correct base. Once stabilized and filtered is bottled for second fermentation by the classic method. The ideal conditions of the basement (4.5 mt below soil level) maintain low and constant temperatures for ideal fermentation over several months, thus retaining the characteristics of the Alvarinho caste. Only then is the "degorgen" to eliminate yeasts and definitive traffic jam. Of citrus yellow, thin and persistent bubble, the aroma shows the fruit of alvarinho with persistent flavor and complexity.
