H.O Sousão

HO SOUSÃO is born from the selection of plots of the Sousão grape variety. With exposure to the east and schist soils, the different plots are located at altitudes ranging from 240 to 300m, which requires strict monitoring of the maturation of the different terroirs.

Winemaking After manual harvesting, the grapes were transported in 18kg capacity boxes so as not to damage the integrity of the bunch. Once in the winery, the boxes were unloaded onto a sorting conveyor belt for the first sorting of the grapes. This was followed by destemming, berry-by-berry selection and crushing, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place over 10 days where, depending on the plot and the age of the vineyard, a specific protocol was implemented for the Sousão variety. Using gentle winemaking techniques, it was possible to extract all the varietal character of the variety while demonstrating its finesse. After malolactic fermentation, the wine aged in 225L oak barrels for 14 months. After bottling, the wine aged for a further 8 months in the bottle.

Tasting Notes HO SOUSÃO 2018 is a ruby-colored, almost opaque wine. In terms of aroma, it presents notes of black fruit, blue fruit and is very resinous and balsamic. In the background, it is possible to feel the complexity of the spices from the barrel aging. In the mouth, it is very fresh, with polished tannins that give structure and volume to the final product and great storage capacity.
