Description
Vinification:
The grapes remain at night in the refrigerator at 8ºC. After this period, a manual selection of the grapes is made before the total deceival, followed by a delicate pressing of fresh grapes. The low -low -temperature must for two days. The fermentation takes place in cement Cuba, where he interned for 6 months “Sur Lies” and “Bâtonnage”. The choice of this tank was motivated by its thermal stability, the preservation of the natural and neutral characteristics of the wines and also by the maximization of thermal inertia given its spherical form.
TEST NOTES:
