Vinification:
Disgust and crushing; 12 hours of pre-fermentation maceration, cold clarification for 48 hours. The fermentation took place in a stainless steel tub with controlled temperature to about ¾ of the sugar was exhausted by yeast.
Internship:8 months internship in a barrel on total dreaks, suffered "Batonnage".
Proof Note:
Pale color with excellent aromatic intensity, dominated by minerality with notes of high quality wood. Excellent volume, freshness and balance, ideal for accompanying white meats and fatty fish.
