Vinification:
Pressing and destemming. Cold clarification between 48 and 72 hours. Long fermentation at a low temperature of between 14 and 18 ºC.
Aging:
Aged for a minimum of 4 months on its lees, with 'battonages'.
Taste:
Fresh, frank and direct entry with a sparkling acidity. Long finish with a mineral character.
