Vinification:
The plots are located at 600 meters and 300 meters above sea level in the Douro Superior. The grapes are hand-picked in September in 20 kg boxes. Once in the cellar, the grapes spend 12 hours in a cold chamber at 10°C. After extraction and pressing, the grapes (both varieties together) ferment at 25°C in stainless steel tanks with indigenous yeasts. The wine is then aged for 30 months in used oak barrels and stored in the bottle for a year.
Tasting:
The Tinto Cão variety needs time to show its characteristics. It has an early "restless" life and the maturation period in barrel and bottle unfolds its potential. The main feature is a structured wine with a very smooth and long finish, as few Douro grape varieties have. A small percentage of rabigate gives the aroma and mouth an "attitude" through its acidity.
