Description
From the best plots at Quinta da Carregosa, the grapes were hand-picked in the plots that presented the most balanced ripening. The grapes are crushed and completely destemmed.
This is followed by a period of 24 hours of pre-fermentation Maceration at 30ºC to maximize the performance of the grape enzymes responsible for extracting color and aromas. Selected yeasts are used to induce alcoholic fermentation, which takes place between 22ºC and 24ºC for a minimum of 10 days. Induced malolactic fermentation with temperature control.
COLOR: Deep ruby.
AROMA: Intense aromas of black fruits, blackberries and cassis, with hints of spice and vanilla.
FLAVOR: Silky texture, fine tannins; intense; good concentration; beautiful structure, with magnificent transparency; long finish, great precision and very persistent.
