Description
From the best plots at Quinta da Carregosa, the grapes were hand-picked in the plots that presented the most balanced ripening. The grapes are crushed and completely destemmed. This is followed by a 24-hour period of pre-fermentation maceration at 30ºC to maximize the action of the grape enzymes responsible for extracting color and aromas.
Selected yeasts are used to induce alcoholic fermentation, which takes place between 22ºC and 24ºC for a minimum of 10 days. Malolactic fermentation induced with temperature control.
TASTING NOTES
COLOR: Ruby red.
AROMA: Very complex, excellent evolution in the bottle, elegant bouquet dominated by “cassis”, spices, tobacco box and very well integrated vanilla notes.
FLAVOR: Lots of concentration and body, ripe tannins, excellent balance and a surprisingly long finish.
