Quinta de São Simão da Aguieira Crushed White

Citrine color with greenish reflections. Very fresh and youthful aroma, with notes of tropical fruits such as pineapple, evolving into a citrus character of lemon, combined with aromas of anise and fennel. An elegant and full-bodied wine, where the intensity of the palate and the good acidity provide a perfect balance and a distinct persistence.

Winemaking:
After 12 hours of skin maceration, the grapes were pressed, using only the must from the exhaust and low pressure of the press. This was followed by cold static settling, after which the must was separated from the lees. Fermentation began at a controlled temperature of 14-16ºC. Once alcoholic fermentation was complete, the wine aged on its fine lees for 6 months.
