From a single 80-year-old vineyard comes the Dão wine, Casa da Passarella O Énologo – Vinhas Velhas, and it is through this wine that we intend to showcase the unique terroir of that plot. The old vineyard is a collection of vines of about 24 different varieties (including some white varieties, as was perfectly normal at the time) which, over almost a century, have naturally adapted to that plot in perfect harmony. The harvest is manual and done all at once, with the fermentation of the entire grape blend taking place in traditional cement vats. Thanks to the natural balance provided by the vineyard, fermentation occurs spontaneously, without any need for must correction. We thus embrace our terroir – with a minimalist wine in our cellar. Vinification in cement vats with pre- and post-fermentation maceration. Aged for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.
