Quinta das Carvalhas Reserva represents the most classic and original style of this Thursday, encompassing the various strands
of this terroir, so rich in diversity, with installments located in both north and south quadrants. This wine is born from
Ambition to portray the fifth for its history and tradition in the panorama Douro doc by the hand of Pedro Silva Reis and his fine
Wine Division.
Vinification and internship
The grapes are harvested by hand and transported to the cellar in 20kg boxes. After undergoing a careful manual choice, curls from portions of old vineyards are developed and directed to granite mills, where alcoholic fermentation will be followed with traditional foot. Touriga National Caste Curls are deceived, and the grapes are slightly crushed before they are directed to fermentation vats. Following is the alcoholic fermentation of the control the controlled temperature between 24-26oC. Wine then interns in new (20%) and used (80%) barrels of French oak for a period of 12 months until traffic jam.
