Description

Vineyards : 35 years, producing an average of 4,000 kg/ha.

Winemaking : Manual harvest in 18kg boxes, followed by a gentle pressing after a short maceration. Fermentation in used French oak barrels.

Stage: 12 months on the lees, in used French oak barrels with “batonnâge”.

Gastronomy: Serve between 12 and 14 °C. Fish, seafood and poultry meats and white meats. Smoked fish, cod dishes and foie-gras, as well as strong, creamy cheeses.

Proof Note : Elegant aroma dominated by stone fruit, with notes of peach and elk combined with light smoked notes, with minerality. In the mouth it is broad, voluminous and textured, with creaminess in balance with the surrounding acidity.
