Description
Vinification:
Manual harvest in 15 Kg boxes. Selection of conveyor table. Gentle crushing and pressing. Very slow fermentation at low temperature (14ºC) Maturation: fermented medium in new and used French oak barrels, with weekly agitation of the tank.
Test results:
Citrus yellow color with green tint. Exuberant and very elegant aroma, with sesame, tropical and mineral, well married with the vanilla from the new oak barrels. Good mouth volume, full of good flavors and strong acidity; very long and delicate finish.
