Vinification:
Manual harvesting; partially destemmed; fermentation in stainless steel; Manuel pressing; 3 months of maturation in concrete eggs; unfiltered bottling.
Test results:
Melissae is the name of the honey nymphs, another substance associated with the divine world and closely linked to the origins of wine. The choice of this name is a tribute to bees, for a wine with intense floral aromas that remind us of the nectar they harvest. Melissae grapes come from our highest ground, which is also home to our bees.
