Description
Concept: A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the volcanic mountain of Pico, the vines are planted in the crevices of the rock, next to the sea, where you can hear the "crab singing," because this is where there is the most sun and heat. A proximity of, sometimes, only a few meters, which necessitates protecting the vines with walls (corrals) from the strong, saline winds of the Atlantic.
Tasting notes:
Clear, citrine yellow color. Pure mineral aroma, citrusy with notes of grapefruit. Tense, fresh attack with a very present minerality and acidity, good persistence and saline notes.
Winemaking:
Selective manual harvesting in 20kg baskets, whole bunch pressing, transfer after 24 hours to 600-1000L fermentation tanks.
Storage and serving: Store at 6-8°C.
