| Side Dishes | It is the ideal accompaniment to salads and white meat dishes. It is also ideal served as an aperitif and is a good companion to soups and fish dishes, and even to light meat dishes or more seasoned cuisines given its body and aromatic complexity. |
This rare wine, with its pale rosé color, presents an intense, rich, and complex aroma, with floral notes of roses and orange blossom. On the palate, these aromatic sensations are enhanced and intensified, which, together with good natural acidity, result in a wine with a full, very mineral, very dry, and fresh finish. Given its rarity, we can define it as Rare and Original.
Winemaking:
Produced with Moscatel Galego Roxo grapes planted in 2003 on the northern slopes of the Serra da Arrábida, in Azeitão, at the Quinta dos Frades vineyard. After careful sampling of the grapes in the vineyard, the harvest date was set. On August 9th and 10th, the grapes entered the winery, were chilled and gently pressed; the resulting must, after clarification, fermented at low temperatures (10-12ºC), thus achieving a very slow fermentation aimed at preserving the primary aromas of the grape variety. It aged on its fine lees for six months, giving it unctuousness and a long finish.
