With fine, persistent bubbles, it is very elegant and harmonious. Intense and distinctive, it combines citrus and some white fruit notes with hints of toasted bread. Full-bodied and very persistent, with a beautiful acidity, it finishes beautifully and complexly, but marked by the typical minerality of the grape variety from which it originated.
Winemaking:
After pre-cooling to 5ºC, the grapes were gently pressed, without crushing or destemming. The resulting must was clarified by static decantation, followed by alcoholic fermentation at a controlled temperature to obtain the base wine for sparkling wine, which remained on the fine lees of fermentation for 1 year. After bottling, a second fermentation took place in the bottle (Champagne method). The aging on the lees was approximately 15 months in the bottle.
