Grapes produced using organic farming methods in vineyards planted on the Beira Interior plateau, in high-altitude granite soils. Vines planted exclusively with native varieties, perfectly adapted to the rustic climate caused by the altitude.
Grapes harvested by hand, received with total destemming and immediate crushing. Fermentation between 16-17ºC for a period of approximately 20 days with indigenous yeasts.
Aging on fine lees with 'batonnage' in vats until bottling in January.
The low productivity of granitic soils, especially under organic production methods, gave rise to this wine with an intense, fresh and very elegant aroma, with citrus notes in harmony with very discreet floral notes. On the palate it is very fresh with volume provided by contact and uplift of the fine lees until bottling.
