Winemaking:
After destemming and gentle crushing of the grapes, a brief skin maceration optimizes the extraction of desirable aromatic compounds and precursors. After clarification, the must ferments in stainless steel tanks at a controlled temperature between 15 and 17°C. Vinification in a reducing environment continues during the next stage, minimizing contact with oxygen until bottling, in order to preserve the primary aromas that are essential in consolidating the overall profile of this wine. Aging in stainless steel tanks until bottling.
Exam notes:
The rich aromas include pineapple, mango, and a touch of plum with subtle vanilla notes in the background. On the palate, it presents a luminous freshness, with well-defined crisp flavors of plum and apricot, resting on a perfect acidity that lends great elegance and balance to the whole.
