Side Dishes: Este vinho é bastante gastronómico, especialmente para ser apreciado ovos mexidos, \boletus edulis\, suflê de queijo, \ragout\, ou lombos assados. Ideal com queijo de ovelha não muito maduro e sobremesas feitas com morangos.
Clean and bright color, bordeaux, with red tones. Very intense and seductive aroma, with a lot of fruit, dominated by very mature strawberries and blackberries. The strong aromas of wood give it complexity. In the mouth, the wine begins soft, followed by a fruit concentration; It has structure and a lasting flavor. It is a wine that can be appreciated young by the concentration of fruit, or old, for the balance and complexity it can achieve.
Vinification:
The grapes were manually vindicated for small containers and immediately unloaded at the Quinta dos Boa Ares winemaking center. The fermentation took place in 100% stainless steel vats between 25 and 28 degrees of temperature, followed by two weeks of maceration. Malolactic fermentation took place in vats (60%) and oak barrels (40%). The wine opened 18 months in Cubas and French oak barrels
