A blend of three white grape varieties from the Dão region, where the aim is to combine the different characteristics of the grapes that compose it in order to achieve balance and harmony, as well as the gastronomic aptitude that characterizes the good white wines of this region. It is elegant, fresh and vibrant! By aging part of the Encruzado blend in French oak barrels, the intention was to reinforce its complexity, as well as its volume and structure.
Winemaking:
Separate vinification of the Encruzado grape variety. Manual selection on the sorting table. After destemming and crushing, the resulting must was sent to a pneumatic press where the must was separated from the skins, and the must was subjected to static decantation at low temperature for 48 hours for clarification. Fermented in stainless steel tanks at controlled temperature, part of the Encruzado batch aged for about 6 months in new and used French oak barrels.
