This wine associates its quality with the name of the cartoxic monks who, between 1598 and 2019, led a lonely life of prayer in the monastery of Santa Maria Scala Coeli.
It is based on the most common castes of Alentejo: Trincadeira, Aragonez, Alfrocheiro, Parakeet, Brunette and Padded ink. With oak wood internship, it is a wine with good structure, elegant and combines the aromas of the castes used with a persistent and complex flavor.
This wine associates its quality with the name of the cartoxic monks who, since 1598, have practiced a lonely life life at the Santa Maria Scala Coeli convent in Évora. It was first produced in 1986.

Vinification
Produced from the castes, Aragonez, Trincadeira, Alicante Bouschet and Castelão, planted in the vineyards of the Eugénio de Almeida Foundation. When grapes reach the ideal maturation state, they are harvested and transported to the winery, where the technological process begins. Then, the grapes are fermented separately, in stainless steel vats, at 27 ° C, which follows post-fermentation maceration extended for 12 months in casks and french oak barrels and 12 months in bottle.
