Description
Aromas full of passion fruit and lemon. Very focused and aromatic. On the palate it is dry, salty, and mirrors the nose: passion fruit and lemon. It's still at a very young stage; it could have more acidity. It has a profile of the finest and most delicate flowers. Light, but very clear. Long and persistent finish.
Winemaking:
Born from hand-harvested grapes, 100% Encruzado. Fermentation begins due to skin contact during maceration in cement vats with indigenous yeasts. Pressing is done by fermenting the must, transferring it to Eastern oak barrels (1/3 new barrels, two-thirds used barrels), which concludes the fermentation phase and lasts for nine months (with 3 months of bâtonnage).
