Notes of wild berry jam, floral aromas, and a certain vegetal touch. Fresh and balanced on the palate, flavorful, firm, and very gastronomic.
Winemaking:
The grapes, selected from the best plots of red varieties on the Favaios plateau, are harvested manually in early September. Upon arrival at the winery, the grapes are destemmed, crushed, and chilled, then undergo pre-fermentation skin maceration for about 12 hours at a low temperature. After light pressing, the resulting free-run juice is statically clarified, and alcoholic fermentation begins at a controlled temperature for a period of about 15 days. Once alcoholic fermentation is complete, a 3-month aging period begins, during which contact with the fine lees is promoted, with 100% of the wine aging in stainless steel until bottling.
