Description
A complex aroma with a balanced mineral character, tropical and citrus fruits, white wildflowers, and subtle, evocative toasted wood notes. On the palate, it is full-bodied and creamy, with a refreshing feel and a very long finish.
Winemaking:
Hand-harvested into small, perforated 15 kg boxes, cold fermentation technology in a reducing environment with controlled temperature around 16°C, very gentle crushing and pressing in an inert atmosphere to preserve the full aromatic potential of the grapes. We made a great effort to ensure that all pre-fermentation operations were carried out with great rigor to preserve the intrinsic quality of the wine. Part of the wine fermented in used French oak barrels and remains there after brief racking on the fine lees with regular stirring ("bâtonnage") until the final blend is made with the wine in stainless steel tanks. Fermentation and aging in French and American oak with "bâtonnage" until bottling in April.
