This Cedro Reserva is made from the distinct Viosinho and Gouveio grape varieties, which give the wine character and complexity. The aroma is intense and captivating, with fresh notes of citrus fruits, peach, and floral nuances that add elegance to the whole. On the palate, it reveals a silky texture and fine acidity, highlighting vibrant flavors of lemon, ripe peach, dittrichia herb, and a distinct minerality. The subtle integration of oak provides a refined structure, while the lingering flavor enhances the taste of the wine. This Cedro do Noval Reserva Branco is fresh, vibrant, and full of character, reflecting the unique schistous terroir of the region.

Winemaking:
The different grape varieties are destemmed and lightly crushed before pressing. The wines are primarily fermented in stainless steel tanks; 35% are fermented in 225-liter French oak barrels, 20% of which are new. The aim is to maintain the aromatic finesse of the grape varieties and use the barrel-fermented wines for structure. No malolactic fermentation. Aging: 65% stainless steel tanks, 20% new barrels, 15% second-year barrels. The barrel-aged wines are turned three times a week during the first month after alcoholic fermentation is complete. After that, only once a week for another three months. The total time in barrels is therefore five months.
