VINIFICATION: This wine of superior quality and complexity is the result of the concentration caused by the development of Noble Rot in the grape berries during the months of October and November. The grapes come from a wine that is about 15 years old on the plateau of Alijó, next to the village, on schist soils, with the main exposure to the east, set up in terraces of two bards and pruned in a bilateral cord. The grapes were hand-picked with noble rot selection in mid-November. Direct pressing was carried out in a manual vertical press. Partial fermentation took place at controlled temperature after symbolic decanting. Part of the lot was fermented in used 300-liter barrels.
Tasting notes: Crystalline, with a slightly golden citrine color, this wine has a citrus nose with aromas of orange and peach, complexed with very discreet notes of dried fruit. In the mouth it is sweet and extremely fresh, but round and glycerated, with a
very rich and long finish of orange and honey.
