Vinification:

Disgust and pressing; Static decantation, barrel fermentation used with indigenous yeasts. Clean passage from the thick shorts. Stage in the barric itself for 12 months.

Evidence Note:

Citrus yellow color, very intense and powerful but fresh aroma, dominated by the minerality so characteristic of the vios, in balance with notes of white pulp fruits- such as the pear and plum- and very well integrated and high quality wood. In the mouth it is extremely elegant, with a lot of volume, fresh and balanced. Exceptionally long end where floral and fruit notes return. Ideal with elaborate and sophisticated cooking dishes and intense cheeses
