Winemaking:
Dow's ages some of its finest Port wines for many years in seasoned oak casks in its old cellars in Vila Nova de Gaia. This extended aging process results in wines acquiring subtle aromas of almond and walnut, losing the intense red color of youth but gaining immense delicacy, richness, and profound flavor intensity. The word ' Colheita ' means ' colheita '; for Port, this term is used to describe a single-year wine that has aged in wood for a minimum of 7 years. Many of the Dow's Colheitas available today have been aged for much longer, and Dow's has one of the finest collections of barrel-aged Ports in existence. The family tasting team regularly tastes all the old tawny Ports as they age in the cellar. These wines are racked two or three times a year and then returned to their original barrels. When the tasters deem that the wine has reached its perfect state of maturity, the Port is carefully removed from the barrel and bottled. Due to the long and careful aging process, no fining or filtration occurs.
