In Burgundy, the vines that produce the raisins for this wine rest on the limestone and marl soils. After harvesting, the raisins are immediately drawn into the cellar. They are dried and delicately broken. Then, fermentation takes place in stainless steel tanks and large wood vats at controlled temperatures.
