The challenge for winemakers is to find two grape varieties that, in that year, show the greatest compatibility and together produce a complex and distinctive wine profile.
VINIFICATION / AGING
Moderate pressing in a pneumatic press, static decantation of the wort, fermentation with controlled temperatures in stainless steel tanks at 14ºC, aging on fine lees, filtration.
