Description
Very aromatic, with notes of ripe apple and some quince. Very fine bubbles, dry, fresh, long and with good persistence.
It has a golden color , with very present autolytic aromas that give it great complexity, medium intensity, with aromas of toasted bread, hazelnut, saltiness, pineapple, baking, wet stone, biscuit and lime. Fine and persistent bubbles.
Fermentation allows for the complete autolysis of the yeasts. During the following two years, the bottles undergo a batonnage process every six months, with the aim of enveloping and increasing the mannoproteins, a result of autolysis in the wine, which gives it unusual volume and persistence. Aging for 36 months in the bottle before disgorgement.
