Sparkling wine produced from carefully selected Arinto grapes, harvested at the ideal stage of ripeness for the production of a sparkling wine base.
Fermentation carried out partially in French oak barrels and in stainless steel tanks. Aged on fine lees for 6 months with periodic bâtonnage. Second fermentation in the bottle using the traditional method, followed by aging on lees and intermittent bâtonnage for 42 months. Disgorgement at the end of October 2014 of the first part of the batch, corresponding to 1,400 bottles.
