Sparkling wine produced from rigorously selected grapes harvested at the ideal stage of ripeness for the production of a sparkling base wine. Fermentation at controlled temperature, carried out in French oak barrels. Aging on fine lees for 6 months with periodic bâtonnage. Second fermentation in the bottle using the traditional method, followed by aging on lees and intermittent bâtonnage for 5 years in the cellars of the Cartuxa Monastery.
