Maturation : After fermentation, the wine decants naturally in the tank, being cleaned at the end of the year, when it is prepared to bottling the sparkling wine, with free yeasts. The bottles of sparkling wine go to the cellar to carry out fermentation in the bottle at a controlled temperature and without light. After fermentation, the bottles remain in the cellar, where they stage until the regrinding and degorgement without adding sugar is carried out, at which point the product is ready for sale.
Vinification: Harvested manually, in the last week of August and the 1st week of September. The grapes are unloaded to the membrane press, where they are crushed and the must is extracted. The must is cooled, decanted and transferred to a stainless steel tank where it will ferment, with temperature control.
