Fine bubbles, delicate and persistent mousse. Aromas marked by the grape variety, with quite refreshing floral notes. On the palate it is light, fresh and with a lively and lingering acidity, finishing balanced.
Winemaking:
After careful selection of the grapes, they are harvested into small boxes that are transported to the winery, where they are refrigerated in a cold chamber at 8-10ºC. They then undergo further selection on a conveyor belt and low-pressure pressing in a pneumatic press. Alcoholic fermentation takes place in stainless steel tanks for a period of 18 days at a controlled temperature of around 13ºC. After alcoholic fermentation, the wine aged in stainless steel tanks, with stirring of the fine lees, until May 2007. The second alcoholic fermentation in the bottle began in June 2007, with aging until April 2008. Disgorgement was carried out in May 2008.
