Vinification:
It is vinified by the traditional method of port wine. Hand -harvested grapes are smoothly crushed and, after partial discharge, fermented with maceration allowing to extract the best components of the grape film. The whole process takes place under strict control of temperature and density of wine, allowing the winemaker to choose the ideal time for the addition of wine alcohol, fundamental to lock fermentation and maintain the natural sweetness of port wine. This moment depends on the caste, maturation stage and required final sweetness levels. After the vintage, the wine is in the Douro, where the cold winter helps to sediment the dreaks. In the following spring, wines are transferred to the traditional cellars of the company in Vngaia and stored in Carvalho, where they interns several years. During their aging, the team of oenology follows the wines and acts through lots, refreshments and corrections whenever the proof thus determined it. The selected wines for the final lot are usually between 2 and 5 years, ensuring a rich and balanced end product, about 3 years old.
