Winemaking:
Porto Ferreira Dona Antónia Reserva Branco is made using the traditional Port wine method. The grapes were harvested slightly ripe. After light crushing and destemming, they were macerated in the juice throughout the fermentation period, with the aim of extracting as much as possible of the aromatic compounds from the grape skins. The juice therefore underwent an intense pumping program, which ensured that the desired compounds were fully diffused into the juice, while the skins were kept whole. At this stage, fermentation temperatures and densities were rigorously controlled in order to choose the ideal moment to add the necessary brandy to stop fermentation, which depends on the grape varieties, the degree of ripeness and the desired sweetness (medium in the case of our White Port range). The balance between body and aroma was achieved through the selection of grape varieties with the appropriate characteristics and the choice of the moment to stop fermentation. This determines the final sweetness of the wine. After the harvest, the wine remained in the Douro Valley, and during the winter it underwent its first racking, at which time some adjustments were made. The following spring it was transported to Vila Nova de Gaia, where it began the traditional aging process for Port wine in 640-liter oak barrels, in the Ferreira style. During this period, the wines are racked, analyzed, and tasted several times, allowing the winemakers to monitor their evolution and begin to consider the blend. The final blend is chosen from selected batches that, together, present the taste profile of Ferreira Dona Antónia Reserva Branco Port. To this end, we choose wines aged between 4 and 9 years to maintain the same style, with an average age of 7 years. After blending, the final touches are made before bottling.
