TEST RESULTS
Bright straw yellow color with greenish edge, good viscosity. On the nose it has aromas of pear (typical of the Bical grape) with some hints of iodine and a certain spice (thyme and rosemary). In the mouth it is refined, creamy, relatively smooth and with a lot of minerality, a kind of salinity due to the typical Atlantic climate. On the palate it is fruity and the aftertaste is dry and refreshing, with a persistent acidity.
VINIFICATION PROCESS
Bical is harvested in early September, Arinto, on the other hand, matures later and is harvested 2 - 3 weeks later. Vinification takes place separately. The wine ferments on the lees without batonnage. Wines naturally stabilize during the cold of winter. The final blend is done in early spring, when the wine is stable and ready for bottling.
