Vinification:
This Old Method uses only one fermentation and not two as in the Classic. The grapes for its elaboration must have a sugar content like a white wine and not like a sparkling wine, because there is NO added sugar in its elaboration process. All the sugar used in the process is of natural origin, that is, it was entirely produced by the vine. Initially, the must ferments in stainless steel vats with the final part of the fermentation inside the bottle, in order to create gas with a pressure equivalent to that of the Classic Method.
Touriga Nacional (45%). Elaborated according to the classic method, with refermentation in the bottle, like the great world sparkling wines, which resulted in a very elegant sparkling wine. Its minimum stage on lees was 15 months. It is one of the very rare Portuguese sparkling wines, whose disgorgement date is indicated on the packaging.
