Description
After careful manual selection and harvesting, the grapes are crushed and completely destemmed. This is followed by a 24-hour period of pre-fermentation maceration at 30ºC to maximize the action of the grape enzymes responsible for extracting color and aromas. Selected yeasts are used to induce alcoholic fermentation, which takes place between 22ºC and 24ºC for a minimum of 10 days. Malolactic fermentation induced with temperature control.
Color: ruby
Aroma: good aromatic intensity, ripe fruit and floral notes
Flavor: good structure and body, very smooth tannins, enveloping finish
