The oldest wine region in France, beautifully dressed in lavender, sunflowers, olive trees and vines. North of St. Tropez lies the picturesque Château Sainte Roseline estate, perfectly situated on the Côte d'Azur, benefiting from a unique mineral composition due to its proximity to the coast, with the aromatic profile of the grapes enhanced by the schist and clay present in the soil.
Winemaking: The grapes are gently pressed to ensure a gentle extraction. The must is then stabilized to give a clear juice before fermentation. Temperatures are maintained at 15-17°C throughout fermentation for about 12 days. After this, the must is separated from the lees and chilled.
