Description

Vinification:

Harvest in 22 kg box. Destemming and crushing, 12 hours of pre-fermentation pre-maceration at 34ºC to maximize the work of the enzymes, use of selected yeasts, alcoholic fermentation with temperature control (22-24ºC), pumping over. Stage in new French oak barrels for 12 months.
