Winemaking: Produced from old vines, using traditional training systems, reminiscent of techniques used by our predecessors: natural settling, indigenous yeasts, and skin contact during fermentation.
Aging: Aged on total lees until bottling. 20% of the wine fermented in used barrels, and 80% fermented in stainless steel tanks.
Tasting notes and gastronomy: Citrine yellow color. Aroma of great intensity dominated by grapefruit and mineral notes. On the palate, it is a structured white wine but surprisingly fresh due to its high-quality acidity. Long and persistent finish.
