| Side Dishes | Old Ports are drinks enjoyed after meals. Drink them with cheeses like Stilton or Gorgonzola. But you can also incorporate them into a meal, pairing, for example, a Steak au Poivre with a young Vintage Port. |
A dark, opaque wine with an impressive structure, body, and complexity. It has an aroma and flavor of red fruits, revealing a very creamy texture. Persistent and fruity finish.
Winemaking:
The overripe grapes are harvested manually. This is followed by partial destemming and crushing in a mechanical lagar (traditional stone trough), where intense maceration occurs before and during alcoholic fermentation. Multiple pump-overs during fermentation aim to control temperature and maximize skin extraction. Grape brandy is added to the fermentation at the ideal moment for each grape variety, thus preserving the aromatic concentration, color, and structure of the wine. The Vintage aged in oak vats in the Douro Valley, with controlled temperature and humidity, and after successive tastings, it was bottled 3 years after the harvest. This wine has not undergone any stabilization process, so a natural deposit may form in the bottle.
