It has a vibrant and attractive yellow color with great aromatic intensity, highlighting floral aromas, some tropical fruits, and dried fruits. On the palate, it stands out for its harmony, with a sweetness well balanced by the freshness of the acidity.
Winemaking:
After receiving the grapes and undergoing quality control, they are destemmed and crushed. The crushed grapes are then placed in fermentation vats, where they macerate for one day at a low temperature, thus extracting a large part of the aromas present in the grape skins. At the ideal moment, fermentation is stopped with the addition of grape brandy, resulting in a naturally sweet wine. The wines then undergo an aging period and, after the first few passes, are clarified in winter and placed in oak tanks for a minimum of one year, with the remainder aging in stainless steel. Subsequently, the winemaking team selects the wines that will form the final blend in order to maintain the characteristic style of Monge Branco.
