VINIFICATION
In 2019, the harvest took place at the beginning of August, in order to preserve the natural acidity and aromatic intensity characteristic of the variety. The choice is made in the vineyard in order to harvest the bunches that are in a perfect state of maturation and health, made in 20kg boxes, being placed directly in stainless steel vats, whole bunch, where they are trodden by foot and ferment spontaneously and at a temperature controlled. After the alcoholic fermentation in stainless steel, the malo-lactic is made in barrels, where it aged for about 10 months. After this stage in barrels, the wine was again transferred to stainless steel where it decanted statically for a month and was bottled without fining and with a light filtration.
TEST RESULTS
Pinot noir 2019 is quite vibrant, with an open garnet color, a spicy nose with hints of currant and candied cherry, very characteristic of the variety. In the mouth it is very seductive and delicate, fresh, with notes of red fruits and a herbaceous touch from the stalk, with a long and enveloping finish. Pinot Noir 2019 is a lot of fun to drink while young but shows fantastic aging capacity.
