Description
VINIFICATION
2016 was marked by a cold and rainy spring – with an inevitable impact on the growth rate and vegetative development of plants – followed by an extremely dry summer with marked diurnal and nocturnal temperature variations.
Planted at an altitude of over 500 meters in the Alijó region, the Moscatel Galego grapes were harvested in mid-September and then transported cold to the Quinta de Nápoles winery. Being healthy grapes, with a high acidity content and low level of sugars, they gave rise to a must with great aging potential.
The alcoholic fermentation process started in stainless steel vats and at low temperature with the fine lees, being interrupted when cold, for later transfer to an isothermal vat, thus maintaining a balanced level of sugar and acidity.
