Description
It has a deep red tone and an intense bouquet, with a predominance of Esteva floral notes, as well as ripe red fruits such as plum and strawberry. There are also notes of cedar, but also spices, characteristics of the years of careful maturation, with delicate complexity due to discreet and well integrated aging in oak. The taste also reveals mature red fruits and has elegant body, well integrated acidity and great quality tannins, with a balanced, harmonious and prolonged ending.
Vinification:
Grape curls were harvested by hand and vinified with the most advanced technology. After smooth disgust and crushing, the grapes fermented in stainless steel vats, with reassembly and pelicular maceration the controlled temperature of 28ºC. After maceration, tank the tank, the wine was separated from the masses, keeping the yields from the pressing separated. Finally, the winemaking ends with the malo -fermentation, which took place under ideal hygiene and temperature conditions. After the final fermentations, the selected lot remained in stainless steel tanks throughout the winter. During this period, and benefiting from low natural temperatures, natural clarification was obtained by sedimentation of thick particles. At the end of winter, the wine was subjected to the first transfega, with sediment separation. About 25% of the lot interned about 12 months in used barrels of French oak, so after a finishing collage, in mid -November the wine was ready to be bottled.
