Total destemming, gentle crushing, automatic pressing. Static clarification of must at low temperature. Fermentation of part of the Arinto and Fernão-Pires batch) in stainless steel vats in a cold chamber for 20 days, the remainder (Antão Vaz) fermented in French oak barrels where it subsequently aged for 4 months.
